Didier likes to make this using a cold infusion - the slower process results in a light and refreshing tea. Feel free to vary the flavours with fresh mint or verbena leaves, rasperries, lemons or watermelon.

Didier Quémener's Fruity Green Iced Tea Recipe
3 tsp loose leaf green tea
1 litre spring water, at room temperature
1 organic peach
3 organic strawberries
Slice the peach and halve the strawberries. Place the fruit in a 2-litre jug with the spring water. Put the tea leaves in a tea infuser and add to the jug.
Allow the tea to infuse for 45 minutes to 1 hour, according to taste. Remove the tea leaves and add ice cubes to the jug.
To carry to your picnic, decant into a vacuum flask or chilled bottle and store in a cool bag. Stir and serve ice cold in large glasses.
