Rough Puff Perfection

Michel is passionate about pastry. Lovingly prepared from great ingredients good pastry is pleasure on a plate. And he is admant that patisserie doesn't need to be complex to be good. Rich, buttery rough puff pastry - meltingly flaky yet robust, is much easier to make than you think. This cookery class will show you how it's done.

It's a foldover

Learn how to mix, roll and fold a rough puff pastry dough. Make an almond frangipane filling and prepare and cook fruit, for Tarte au Fine, a favourite of Michel's. Create individual baked fruit tarts and then use rough puff to make an onion-topped Pissaladière. Finally to round off this 4-hour cooking experience your tutor will demonstrate ways to use up and transform leftover pastry. In this class you'll discover that the secret to sucessful pastry making is simple science (a failsafe formula of accurate weights, measures and temperatures).
