From soda bread to sourdough and enriched doughs our full-day bread making course teaches you all the skills you need to bake authentically in a domestic oven. Few things are more satisfying to eat, or more rewarding to make than proper bread baked with dough that you have kneaded yourself. Learning to bake Bread - The Roux Way gives you ample opportunity to do both as you make some of Michel Roux Jr's favourite loaves.

Soda bread to sourdough and enriched dough

Covering everything from the chemistry and craftsmanship, to the techniques and temperature on which good baking depends, this bread course shows you how to turn simple ingredients, flour, water, raising agent, salt or sugar into a myriad of bakes. First, make soda bread then get stuck into sourdough to make a cheat's quick French couronne and slender ficelle sticks. Your tutor will also demonstrate how to make brioche and beignets using enriched dough and you'll shape and bake your own Provencal mini fougasse.
